 Brine Turkey night Before (12 hours) 19 lb Turkey In a Small Garbage Bag in a Pot 2 Cups Kosher Salt, 1 Stick Butter Melted, 1 Tbs Cracked Black Pepper, ½ Cup Sugar

 Sweet Potatoes Boil > Cool > Cut and place in Steel Pan for Tomorrow – Butter and Brown Sugar –refrigerator

 Set up Tables > Wash Glass Dishes > Peggy and Phil Cranberry Salad > Electric Roaster for Ham in basement – Spice rack to dining room

 Shrimp on plate

 
 
 Thursday Morning
 
10:30 AM - Remove Turkey – Wash and Dry inside and Out – 15 minutes each lb. (tail piece in pan)

1. 10:45 AM – Put in Cavity - 1 Sliced Red Apple, ½ Onion Sliced, 1 Cinnamon Stick, 1 cup water, 4 Springs rosemary, 6 sage leaves – Tie Turkey – Basement Oven

2. Put in roasting Pan Breast Side Up – Rub with stick of butter – Salt and Pepper

3. 2 Cups of chicken broth in pan

4.11:00 AM - Cook ½ hour at 500° uncovered

5. 11:30 AM – Remove Turkey (shut Oven) Cover Breast with double Foil - 350° Put thermometer in Dark meat – 175° take out let stand 15 min till 180°

6. 12:00 AM – Baste every ½ hour. (lift foil) last ½ hour uncovered - Add stock if needed

7. 12:15 AM Shrimp on platter

8. 1:30 Peel Potatoes

2:30 Start Potatoes Get out Shrimp
 
2:55 Start Ham (325° 40 minutes) Sue– One cup of water in bottom Basement
 
3:00 Sweet Potatoes - Bottom Upstairs Oven 350 ° - Top Rack Sue
 
 3:05 Green Beans – Rhea - in garage oven
 
3:30 Biscuits (Top Oven) Tom
 
3:30 Mashed Potatoes (Mom and Rhea)
 
3:40 Cornbread Dressing (Oven Top or Microwave) Peggy – When Warm in serving Dish
 
3:40  Marshmallows on Sweet Potatoes – Watch marshmallows Sue
 
3:40 Remove Turkey put on Meat Platter (let Sit Covered with Foil) Tom
 
3:43 Remove Ham – Put on Serving Dish (sit Covered with Foil on Counter) Tom
 
3:45 Gravy - Tom Pour out leftovers – Separate fat and juice - Put pan over two medium burners – mix -Add 2 tablespoons of fat and two TBS of flour for each cup of juice or broth - cook whisking often until darken (about 5 minutes until gravy can coat a spoon – season with salt and pepper
